Preparation time 15 minutes 3 hour Servings 6 portions medium
Ingredients
Pavlova
aquafaba 190 grams
caster sugar 225 grams
potato flour 10 grams
cream of tartar 10 grams
fresh vanilla bean or vanilla paste
Cream chantilly
Flora Professional cream 300 grams
vanilla bean 1
caster sugar 20 grams
Seasonal Fruits
strawberry, mango,kiwi passion fruit peach
Instructions
Pavlova
Pre heat oven to 130c
Whisk Aqua Faba to very stiff, slowly add sugar just like you would a usual meringue.
Keep whisking until super glossy, slowly add cream of tartar, potato flour and vanilla.
Scoop onto baking tray lined with grease proof paper.
Bake for 2 hours. Leave to rest for at least 30 minutes before putting together.
Cream chantilly
Combine all ingredients and whisk until you have thick beautiful whipped cream.
Put together as you would with your favourite seasonal fruits.
