Creamy and spicy Tteokbokki.

Ingredients
2 cup Tteokbokki
2 tbsp Violife Plant Butter
2 tbsp extra virgin olive oil plus extra to serve
1/2 cup shallot sliced
1 tsp salt
1 tsp gochujang chili paste
2 cup San Marzano Tomatoes hand crushed
1 tbsp tomato doppio concentrato
3/4 cup rose wine
1 cup water
3/4 cup Violife Just Like Heavy Whipping Cream
1/4 cup Violife 100% Vegan Just Like Feta to garnish
1 tsp Gochugaru
Instructions
In a non-stick, warm Violife Plant Butter and 2 tbsp olive oil over medium-high heat.
Once Violife Plant Butter is melted, add onions, salt, and cook until softened- around 5 minutes.
Whisk in tomato paste and cook until fragrant and caramelized- about 2 minutes.
Whisk in gochujang , deglaze with rose, and cook until alcohol has burned off- about 1 minute.
Whisk in water, add Tteokbokki, and cook for 5 minutes until softened and water has reduced by half.
Stir in cream, plate, garnish with Violife Just Like Feta, Gochugaru, and olive oil.
